The sauce you see in these beautiful pictures does NOT contain any tomatoes. Can you believe it? It’s pasta ai peperoni, made with bell peppers.

Here’s the recipe for you❣️

Ingredients

* 4 bell peppers (red and/or orange)
* ½ onion, chopped
* 1 garlic clove, minced
* 3 sprigs fresh thyme (or ½ tsp dried)
* 1 tbsp extra-virgin olive oil
* Salt & pepper, to taste
* 1 lb pasta (rigatoni, farfalle or penne)
* Grated Pecorino or Parmigiano, optional

Method

Remove the stems, seeds and white ribs from the peppers, then chop into chunks. Roughly chop the onion and mince the garlic.

Heat the olive oil in a large saucepan over medium-high heat. Sauté the onion for 2–3 minutes, then add the garlic and cook for 1 minute.

Add the peppers, thyme, salt and pepper. Pour in 1 cup of water, cover, reduce heat to medium-low and simmer for about 20 minutes, until very soft.

Blend the vegetables until smooth using an immersion blender (or regular blender). Return the sauce to the pan.

Meanwhile, cook the pasta in salted boiling water according to package directions. Drain and toss with the pepper sauce. Serve immediately with grated cheese, if desired.
