10 minute pasta dish!! This dish is so simple and soooo delicious!!! Gluten-free and dairy-free goodness!

Ingredients:
Gluten free pasta
Cherry tomatoes (with avocado oil, balsamic vinegar, lemon juice and salt)
Pesto (I used the pesto from my recipe blog)
Peas
Almond milk ricotta (I used kite hill)
Roasted pistachios chopped
Extra virgin olive oil
Fresh basil

Cut cherry tomatoes in half. Add avocado oil to a stove top pan on medium high heat. Add cherry tomatoes with balsamic vinegar, lemon juice and salt. Sauté on medium high to high heat for 5 minutes or until tomatoes or slightly blistered. Take off heat and let cool on a plate.

Cook pasta according to directions. When finished add to the tomato pan with 1/4 cup of pasta water. Mix in pesto and peas.

To plate: add pasta with the pesto and peas on a plate then top with cherry tomatoes, pistachios, and ricotta (or any cheese). Drizzle on extra virgin olive oil and then place fesh basil on top. Enjoy!!

Vegan zucchini boats. So easy to make and absolutely delicious!!

Preheat oven to 400 degrees Fahrenheit. Cut the zucchinis in half and then scoop out the middle.

Sauté garlic and onions with paprika, honey, cumin and salt. Add drained black beans and reduce heat to medium low.

Cook mushrooms with vegan butter, lemon and salt.

The sauce has roasted red peppers, almonds, tomatoes, lemon, and garlic. Only takes 5 minutes to make!

Grease baking sheet (I use avocado oil). Fill zucchini boats and top with fresh cherry tomatoes.

Cook boats at 400 degrees Fahrenheit for 30 minutes then on broil for 5 minutes. (Depending on oven, just watch the boats carefully at the end)

Top with fresh parsley or basil and romesco sauce. Enjoy!!💕💕

Quick salad for lunch:
Kale (marinate with lemon and extra virgin olive oil for 10 minutes)
Zucchini (cooked with avocado oil, salt, cumin, onion powder, and garlic powder)
Peas
Radishes
Banana peppers
Broccoli sprouts
Pesto
Goat cheese
Balsamic vinegar

Sautéing my veggies on the stove top always brings a lunch salad to the next level🥰

Working on writing up this recipe from the other night. Spaghetti squash with coconut cream herb sauce, sauteed mushrooms, roasted fennel and carrots and toasted pecans.
