This collaboration came together through a shared love for excellence, great food, and creating unforgettable moments for customers. 🫶

The experience featured live bluefin preparation, elegant canapés, and lots of great conversations. ✨

PureFish Hokkaido Scallops are the pinnacle of 3 different aquaculture methods: kelp farming and shellfish farming & shellfish grounds all working together to make all superior and try to make the water cleaner leaving the farms than when it arrived.

A symbiotic relationship called Multi-Trophic Aquaculture where 3 different species can help and supply each other to make each better.

Large kelp farms established to produce premium kelp to be dried to produce Ichiban dashi, the kelp farms also cleans the water that passes through it while feeding the kelp.

This water continues its journey as water flows down current with bits of micro kelp and nutrients flowing to the Hokkaido scallops grounds where PureFish Scallops then feast on the kelp bits, and nutrients that make these scallops sweeter and plumper by eating kelp and nutrients from this cold clean water.

The water then passes through another shellfish farm where the same water feeds the shellfish and the shellfish in return filter the water as it passes and continues.

3 forms of high quality foods are created and the ocean water continue to support more as it continues south.

This is the type of sustainable aquaculture PureFish supports and in return we get what we believe to be the best tasting scallops in the world.
