Cozy Gorgonzola Chicken Bake
Servings: 4
Prep Time: 15 minutes
Cook Time: 30–35 minutes
Total Time: 45–50 minutes
Ingredients
For the Chicken
4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp Italian seasoning
½ tsp garlic powder
½ tsp paprika
½ tsp salt
¼ tsp black pepper
For the Creamy Gorgonzola Sauce
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
4 oz (115 g) Gorgonzola cheese, crumbled
¼ cup grated Parmesan cheese
½ tsp Italian seasoning
¼ tsp black pepper
½ cup baby spinach
⅓ cup sun-dried tomatoes, chopped
¼ cup chopped walnuts, optional
Fresh parsley, for garnish
Instructions
1. Prepare the Chicken
Preheat oven to 375°F (190°C).
Pat the chicken breasts dry. Rub with olive oil, Italian seasoning, garlic powder, paprika, salt and black pepper.
Heat a large oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side, just until lightly golden. Remove and set aside.
2. Make the Gorgonzola Sauce
Reduce the heat to medium and melt the butter in the same skillet.
Add minced garlic and sauté for about 30–45 seconds until fragrant.
Pour in the chicken broth and heavy cream. Stir gently and simmer for 2–3 minutes.
Add the Gorgonzola and Parmesan. Stir until the cheese melts and the sauce becomes smooth and creamy.
Season with Italian seasoning and black pepper.
3. Add the Vegetables
Stir in the baby spinach and sun-dried tomatoes. Cook for 1–2 minutes, until the spinach begins to wilt.
4. Bake
Return the seared chicken to the skillet and spoon the creamy Gorgonzola sauce over the top.
Sprinkle with chopped walnuts if using.
Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
5. Finish & Serve
Remove from the oven and let the chicken rest for 5 minutes.
Garnish with fresh parsley and a little extra crumbled Gorgonzola.
Serve hot with mashed potatoes, roasted vegetables, pasta, rice, or crusty bread to soak up the creamy sauce.
Pro Tips
Don't boil the cream sauce aggressively after adding Gorgonzola; gentle heat keeps it smooth.
For extra flavor, add a small splash of dry white w**e before adding the cream.
Chicken thighs can be substituted for chicken breasts.
For a milder cheese flavor, use half Gorgonzola and half Parmesan.

For Garnish
½ cup roasted pistachios, roughly chopped
1–2 tbsp fresh parsley, finely chopped
2–3 tbsp honey, for drizzling

Prepare the Brie:
Cut the Brie into 6–8 thick pieces or wedges. If desired, lightly chill the pieces for 15 minutes to make them easier to coat.
