lume restaurants over supply on and must throw out at the end of the night. This food is untouched, nutrient dense, and high quality. One night when Krissy and I were closing, the chef was about to throw away an entire pot of brown rice and quinoa mix. As I saw him approaching the trash can I screamed, “WAIT!! I’LL TAKE IT!! ” He looks at me with a half smile like I was crazy. What was I going to do with an enormous restaurant size pot of grains? To be honest, I had NO IDEA what I was going to do with it. I just knew that I could not watch him throw all that precious viable food in the trash. Through MANY nights of trial and error and taste tests and feedback from friends and family, we finally came up with the cookies we have today. Our cookies are vegan, gluten-free and made from upcycled ingredients. In addition to the grains we rescue, which are turned into flour to make our cookies, we also rescue juice pulp from local juiceries. The pulp is a by-product of juice and otherwise goes to waste. Our solution is scaleable and we are always expanding and creating partnerships with restaurants, grocery stores, etc. SOULMUCHFOODS.com

Our Story

It all started from when we were servers at a restaurant here in San Diego. It was here that we were able to witness first hand the enormous amount of food being wasted every night. (Disclaimer: the food waste is not the leftover scraps on customers plates). The food waste we are talking about is literally food that big volume restaurants over supply on and must throw out at the end of the night. This food is untouched, nutrient dense, and high quality. Every single night we saw a surplus of food get thrown away every single night, untouched my humans. We could not take it any longer. So one night, we asked the chefs to keep the left over grains and told him we were going to do something with it. To be honest, we had no idea what I was going to do with it.. We just knew that we could not watch him throw all that precious viable food in the trash while there were people right around the block holding up cardboard box signs saying they were hungry and homeless. We decided to wrap the grains and take it home. That next day we headed down to 17th street in downtown (one of the most densely homeless populated areas of San Diego). We met so many beautiful people with all different stories but they all shared the common characteristics of being so grateful. This experience of bringing the food to the homeless became the foundation of soulMUCH’s core values. From that moment we made it our goal to bridge the gap between food waste and food insecure!

So what exactly does SoulMUCH do now?

We create a vegan and gluten free cookie made from up cycled food waste. At the end of the night, we rescue the surplus of whole grains that big volume restaurants oversupply on. We dehydrate the grains, mill them into flour and bake them into our cookies. In addition to repurposing the grains, we collect juice pulp from local juice bar to incorporate into our cookies. Each cookies has 10 grams of protein and no artificial sugar! Our mission is to close the gap within our food system by reducing food waste. We can all agree we want a cleaner planet and we are simply giving the public a chance to do just that by eating our cookies!
