Baby Backs & Wagyu Oxtail!

Ribs rubbed and sauced with and foil boated meat down for an hour before finishing hot in the offset.

Wagyu Oxtail, from , rubbed with housemade BulletProof ACP (Ancho-Cocoa/Coffee-Paprika) rub, smoked for 4 hrs, braised for 3 more.

Almond & California Oak smoked pork butts on the 300 Blackout πŸ”₯πŸͺ΅πŸ’¨ Kalua style!!
Seasoned with Alaea salt & some other goodies, then wrapped in banana leaves for the braise and hot hold.

Filipino BBQ Chicken thighs start with a banana ketchup marinade, some Sprite, brown sugar and calamansi to taste. Threw it onto the with a little bit of California white oak then reduced the marinade on the stovetop for a finishing glaze. I did add a little bit of homemade caramel to get a crispy layer of sweetness on the skin πŸ”₯

Day 2: Caramel Miso Pork Belly burnt ends. Glazing, then into the oven for about an hour. The belly took in plenty of smoke yesterday, just building layers of sweetness now πŸ”₯🍬

Rubbed down some prime grade tri-tip from Brandt Beef with my BulletProof Iron Sear steak seasoning on an oyster sauce binder. Then smoked low and slow over almond wood courtesy of then finished with a direct coal sear. Always clean slices with my trusty Chefs knife πŸ”ͺ

Boom. Dinner served πŸ”₯

Smoked Brandt Beef brisket served on banh hoi (Vietnamese woven vermicelli noodles) lightly brushed with olive oil, and topped with fish sauce & thai chili peppered calamansi-chimichurri. Thanks to everyone that stopped by to grab a sample πŸ™πŸΌ

Spent 14 hrs on the pit, figured I might as well cook dinner. My first time doing any type of chicken on this offset.

- Costco boneless thighs seasoned with BulletProof Chicken and Pork rub
- Smoked on Almond wood for 1 hr at 275Β°ish - Thanks πŸͺ΅
- Glazed with BulletProof Pacific Peach sauce and some added brown sugar πŸ‘
- Crank up the heat for another 10 minutes to 195Β° internal

Boom, dinner is served πŸ”₯πŸ—πŸ½οΈ
