Why does a boiled egg's yolk develop a grey color? I get asked the question quite often. No, it has nothing to do with organic eggs and regular eggs, it has to do with the fact that there are sulphur bonds formed with the iron (ferric/ ferrous) in yolk and water. Science of food is fun!!

Just picked up my Advanced Culinary cert from last year. This was for Farm-to-Table and Molecular Gastronomy.
I also got to tour the industrial kitchen at the school. We did everything at our home kitchen (because of Coivd closures), which was of course fabulous, because I now know how to do almost everything using home equipment. However, there are some equipment, like the antigirdle or salamander, which are only available in a commercial kitchen and hard to aquire and use at home.
The trip put me in a happy nostalgic state, remembering all the fervent yet joyous time I had for a whole year making fabulous food during the lockdown. How fortunate was that!

Salt n Pepper Shrimp and Chicken

One of my often ordered comfort foods from my favorite local Chinese restaurant (Minh Ky on El Cajon Blvd) is Salt n Pepper Shrimp, and sometimes Pork or Chicken. This weekend I made them at home. I chose not to coat the proteins, because I wanted to limit the deep frying. The jalapeΓ±os were heat-less, hence needed a generous amount of white pepper (so that the color remains light). And for additional flavor I sprinkled couple teaspoons of mushroom seasoning. Happy to report that I'm quite pleased with the results.

Tomatillo Chutney, "plastic" style 😊

We Bengalis are famous for our sweets and desserts. But before we venture out on the dessert course after a tummy full delicious main courses, we require a Chatni-Papad course. It is tradition! Now, these chutneys are semi-sweet, bit tart and sour, with light spices and even with some dry red chilies, and made with wide varieties of fruits and even vegetables. Think of it as a palate cleanser before delving into scrumptious desserts.

Tomatillos were sitting here on my kitchen counter, so I ventured to innovate a chatni with them. Used the "plastic" chatni method. It had worked for kiwis in the past, so I figured it might work on tomatillos as well. And I am super duper pleased and proud to announce that it turned out amazing! 😊 Because of tomatillos' inherent tartness, just a few drops of lime juice was sufficient to tease out an enticing aroma. And, why not serve with tortilla chips? Fusion Ka Zamana Hai!

Tomatillo Sambar

Being so close to the border has its advantages. We get fresh tomatillos, almost year round. Nice firm and plump! I love their citrusy tart flavor. Today I thought I'd use them in sambar. I did add some jaggery to the sambar, and it tastes perfectly balanced.

Chicken biriyani, 100% Soma's style πŸ˜›πŸ˜›

Well, I'm trying out this new spice mix i dreamed up with kasuri methi! Ha!
In the crocpot, I have layers of rice, boiled eggs, cilantro, cooked chicken and potatoes, and on top sliced lemons. The gravy and flavors percolate down into the rice.

He's right, grind your black pepper right before using. Pre-ground black pepper, not so good.
I have all these kinds, except the pink ones. I don't care for it.
I use white pepper in soups and in white/ light colored dishes. And I use green pepper corns in Thai curry pastes all the time, they add a beautiful aroma to the pastes, and not much heat. Schezwan peppers are just fabulous, the tingling sensations in the mouth is quite unique, you need to experience it!

This is a VERY spicy curry made of handmade lentil dumplings (Bori). Lentils are soaked and then ground to a dry paste with spices. Then tiny dumplings are formed (like Hershey Kisses) and air dried in hot sun. These Bori can be stored in airtight containers for months.
Here we deep fry in mustard oil and then make a curry with plenty of red chili powder.
My paternal grandmother's version used to be almost crimson red and very hot. I make mine hot enough but not like grandma. My gut has mellowed over two decades in the US. πŸ˜†

Egg and Chicken curry with Prunes, Tamarind, and Yogurt

Another improvised recipe. It's lip smacking sour, yet quite creamy.
Prunes are dried variety, I usually have some handy in my pantry. Tamarind goes really well with any protein, I just felt like using it today. I didn't marinate the chicken, and went to straight onto curry. Yogurt was added at the very end, when the dish was off the flame, so that it'll not curdle in the heat.
I just love eggs, so I often add blistered boiled eggs to my chicken curries. Why not?
The rice here is low GI type, the grains are a bit firm. Not my favorite, but if I have to stay healthy and still want rice, I need to compromise! πŸ˜›

Satay and Lemongrass Chicken

It's all about the sauce!!!
I buy shredded frozen lemongrass from the local Vietnamese grocer and fresh kafir lime leaves which I freeze. These come super handy when improvising a Thai dish to suit my craving and also the ingredients availablein the fridge drawers. Rarely do I pick a recipe first and then shop for it, these days all I do is improv. 😊
