Ahoy Matey!! They call me Smoking PegLeg Dietz!!! I just wanted to give a quick status update on one of my favorite holidays, and of course, give thanks to everyone who has reached out to see how I am doing means a lot! Love you all!! But I took the 30+ staples out of my ankle yesterday, and it looks like it is healing great so far. I got my cast on for the next 3 weeks!! The great news is starting next week, and I’ll still be able to work from the office since I can’t come to you if you would like to stop by and check out our new Office downtown and say Hi!! I’m calling it “Bring a Bartender to Work Day”!! DM me if you have a few minutes to spot by and do the tour would love to have you here!! Swapping out the Peg-leg for a Knee Scooter so much funner to get around the office on that thing lol 😎❤️🎉 For the Turkey I Brined it overnight using Bird Bath Brine, with my own butter Herb blend rub. I did 3 hours with hickory/cherry wood smoke in a vertical smoker at about 275, basting it periodically while getting the internal temperature up to 165 before letting us rest for 20minutes. So juicy!! Always brine your Poultry before smoking it!!
