Let's talk sausage. We grind the pork right here, using pork shoulder to give us a fattier sausage than what you'd find in the big box stores.​​​​​​​​

For our Italian sausage, we want this to be a versatile staple for all the cooking you get up to, so we make it fairly mild with just a slight kick (thanks, CRPs). Some fresh garlic, black pepper, fennel, and fresh parsley add a burst of flavor without being too overwhelming. It just tastes like a damn great sausage.​​​​​​​​

The casing, let us tell you, is all natural. That means they're porous, absorbing the flavors when you smoke it, for example, and it gives you this satisfying "SNAP" when you cut into it for the first time.​​​​​​​​

Denver steaks are our favorite cut of beef, hands down. We love it because it’s got this perfect marbling, and it’s just so versatile. You can grill it, sear it, sous vide it - anything you do to this steak is going to be great. Flavor-wise, Denvers are so tender and have this deep, beef flavor. These are prime, which means they are extra amazing.​​​​​​​​

Guanciale's ready! We cured ours with salt, pepper, sage, rosemary and garlic, leaving it for a month to develop its flavor. Then we smoked it for a whole afternoon to build more flavor. Final step was the dry-ager, where it finished curing for about three more weeks.

Grab some for whatever you plan on cooking this weekend. Chef's making a carbonara and a brunch hash with this fatty goodness.
