You guys are seriously not ready for how good this slow cooker cabbage and potatoes look! π₯¬π₯β¨ Look at those juices running... the warm, comforting flavor is actually insane! Tender, sweet cabbage wedges slow-cooked to perfection right alongside seasoned, golden potato chunks in a savory garlic broth. Served piping hot next to a bed of seasoned quinoa, it is the absolute perfect cozy, healthy weeknight meal! π€€
π INGREDIENTS
1 medium head of green cabbage (cut into thick wedges)
4 medium potatoes (washed and cut into chunks)
2 tbsp olive oil or melted butter
1 small onion (diced)
3 cloves garlic (minced)
2 cups vegetable or chicken broth
1 tsp Italian seasoning
Salt and black pepper to taste
Fresh parsley (chopped for garnish)
Seasoned quinoa for serving

In a small bowl, whisk together the broth, olive oil or melted butter, minced garlic, Italian seasoning, salt, and black pepper.
Arrange the seasoned potato chunks and diced onions evenly at the bottom of your slow cooker.
Place the thick cabbage wedges carefully right on top of the potatoes, nesting them tightly.
Pour the garlic broth mixture evenly over the cabbage and potatoes.
Cover and cook on LOW for 5β6 hours (or on HIGH for 3 hours) until the potatoes are fork-tender and the cabbage is perfectly soft and sweet.
