For the T-Bone Steak:
Preheat your grill or a cast-iron skillet over high heat.
Season the T-bone steaks generously with salt and black pepper.
Drizzle olive oil over the steaks to prevent sticking.
Sear the steaks for about 3-4 minutes on each side for medium-rare, adjusting the time to your desired level of doneness.
Remove the steaks from the heat and let them rest for a few minutes before serving.
For the Roasted Potatoes:
Preheat your oven to 425°F (220°C).
