Long before I had any inkling of being a chef, I learned how to make crepes from my mom.

Our French Canadian family regularly had crepes for dinner on Sunday night with our homemade maple syrup.

These days I make the thinnest crepes with corn starch, not flour (thank you Rose Levy Beranbaum).

And the kids love them for breakfast with maple syrup, too!

When the girls were little we read all of the Madeleine stories repeatedly. However I haven’t made traditional madeleines since I was a culinary student.

Someone gifted me madeleines molds a few years ago and I pulled them down from the very top shelf that I needed to stand on a chair to reach. After giving them a good wash to get rid of the accumulated dust (oops), I set about making madeleines with my junior baker Lulu. The hardest part was letting the batter sit overnight before baking (this rest allows the madeleines to develop their characteristic hump). We baked them off and had them for breakfast. Delicious!

I love long cooked braised dishes. Braising is a classic French technique using moist heat to slowly tenderize tough cuts of meats.

This recipe was inspired by a recipe in the cookbook “Braise”, by Daniel Boulud and Melissa Clark. Daniel and Melissa (yes I’m on a first name basis with them, wink wink), are two of my long time culinary idols. I have almost all of the cookbooks Melissa edited in conjunction with more well known chefs long before she became famous in her own right at the New York Times.

I finished this recipe with rice noodles and green beans, garnished with sautéed garlic and scallion.

Good thing I’m walking around the neighborhood and riding bikes with the kids! We are baking enough to feed a small army...
