Episode 1: Braised Napa Cabbage π₯¬ a perfect dish if you have a head of cabbage that has been sitting in the fridge for who knows how long! Definitely for the brothy napa cabbage enthusiasts (you know who you are) and those who feel like that desperately need veggies ASAP!
- soak dried shiitake mushrooms and dried baby shrimps in water
- chop washed napa into large pieces (theyβll shrink in the braise)
- peel and chop carrots into match sticks. chop green onions in similar lengths. peel at least 6 garlic cloves.
- drain shiitake mushrooms and dried shrimps and slice mushrooms into thin strips. stir fry until golden.
- remove mushrooms and shrimps and toss in green onions and garlic cloves. stir fry until golden and remove.
- sauce pork strips (loin or pork belly both work) and remove when golden brown.
- toss in carrots and deglaze with rice wine.
- remove carrots and juices. toss in napa cabbage, salting and adding water to shrink.
- do this in batches until all napa cabbage is slightly softened.
- toss everything in a tatung steamer, or in a lidded pot over a low simmer. Add soy paste, oyster sauce, white pepper, a packet of dashi, a splash of rice wine, and half a cup of water. Cook for 40 minutes - 2 hours
- enjoy on its own or with a bowl of steaming hot rice. Pair with KACE Passionfruit Lychee Black Tea πΉπ
** if you have access to dried flounder, fried pork skin, and / or black wood ear mushrooms definitely add those!! π©π»βπ³
