Excellent seafood lunch in Manzamitla. Met lovely staff some who returned from years living in the US. Octopus is my favorite seafood but the prawns and whole fried fish were excellent. Also met a cook preparing lasagna for family meal. Homemade pasta! Sorry I would not be there for the two-day marinated pork cook in a fire pit.

Use what you have. Two lonely pieces of salmon tails in the back of the freezer transformed. Last week I found the last crop of Early Girl tomatoes and puréed a mountain of them. No recipe recipe: shallots, garlic, tomato pasted wine, reduce, puréed tomatoes, reduce, add seasoned fish, cover, uncover. add olives, tarragon, thyme, and lemon juice. Garnish with EVO. Dinner!

Working with what I had, seeded bread, sour cream, sliced red onion, smoked salmon, Early Girl tomatoes, tarragon, and my newest discovery golden yolk eggs.
