Grilling this weekend?
May we suggest Phoenix oysters. This oyster mushroom has broad, flat caps that are essentially designed to be thrown on the grill. Brush with a little marinade, or bbq sauce, or butter, or even nothing.
Perfect as a taco meat, side dish, burger condiment, salad topper…

Roasted mushrooms are so easy and taste great with pretty much everything. These are a bunch of oyster and shiitake seconds hand shredded tossed with a wee bit of avocado oil and roasted at 375 for 20 minutes, then mixed with a puree of fresh herbs and olive oil. On top of greens and eggs.

A few fun rules in my kitchen…
Eat mushrooms at least three times a week
Use more herbs, fresh when possible
Try to get 5 greens in every meal
Three eggs, minimum
More flowers, always
Eat as many peas as possible while they’re in season

I guess winter is officially officially over.
How about some squash blossoms stuffed with goat cheese and roasted mushrooms? A dusting of corn starch h and a quick pan fry? Let’s do it, and eat them in the garden while the bees buzz around the borage and calendula and Valerie June plays on the record player.

Join me at Far West Fungi’s Santa Cruz Mountain Mushroom Festival at Roaring Camp in Felton, CA this Saturday & Sunday.

Saturday 11-12: I’m on the Redwood Stage giving my Mushrooms 101 talk. This talk is designed for kids (of all ages!) and curious new comers alike. We’ll cover high level basics about edible mushrooms, cultivation, and cooking with mushrooms in a fun and interactive talk.
Kids under 12 attend the festival free!!!
