Mochi Rabbit Desserts I create one of a kind variations on the Hawaiian Dessert, Butter Mochi. No matter what, this is a real bit of fusion cuisine.

Being a Haole (white person), I pay tribute to this one-of-a-kind fusion of Asian and Hawaiian blending of cultures and desert cuisine. Butter mochi is essentially a kind of cake made with coconut milk and sweet rice flour, plus butter and eggs. It is suspected that the origins of butter mochi may be a Filipino dish called bibingka which in turn was likely influenced by the Portuguese fused with J

apanese esthetics. It is "local food" of the isles of Hawaii. Being a Haole (white person), I pay tribute to the Hawaiian culture with this one-of-a-kind fusion dessert. I first experienced butter mochi by way of my partner's local Hawaiian recipe book. Then, on the island of Maui, I hunted it down in local grocers and shops. It's a rare find even on the island. I have made many batches of this dessert and tested the results on transplanted Hawaiians here in the Bay Area. Their response, "yah brah dat broke da mouth" - it's delicious.
