3 Ingredient Pumpkin Seed Cookies 🎃

High in Magnesium!

Recipe:

- 2 cups pumpkin seeds (pepitas), roasted & salted
- 0.5 cups maple syrup
- 0.5 cups chocolate chips (for drizzle)

Steps

1. Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Make the dough: Pulse 2 cups pumpkin seeds (pepitas), roasted & salted in a food processor until coarsely ground — you want some texture, not a fine flour. Transfer to a bowl and stir in 0.5 cups maple syrup until a sticky dough forms.
3. Shape cookies: Scoop tablespoon-sized rounds onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each one slightly with the back of a spoon.
4. Bake: Bake for 10–11 minutes, until the edges are golden. They'’l look soft but will firm up as they cool — don't overbake.
5. Cool completely: Let cookies cool on the baking sheet for at least 10 minutes 10:00 before moving them — they’re fragile when warm.
6. Chocolate drizzle: Melt 0.5 cups chocolate chips (for drizzle) in a microwave in 30-second intervals, stirring between each, until smooth. Drizzle over cooled cookies with a spoon or piping bag. Let set for 10 minutes before serving.

It’s 2026… can we finally agree vegans aren’t protein deficient? 🌱💪

One of the most common misconceptions I still hear is that plant-based diets lack protein, meanwhile this pasta is packed with it 👀

Protein sources in this recipe:
• Red lentil pasta
• Peas
• Nutritional yeast
• Cashews

Pasta Sauce:
• 50g toasted cashews
• 40g nutritional yeast
• 250g peas
• Juice of ½ lemon
• Salt & pepper to taste
• 25ml olive oil
• 1 vegetable stock cube
• 100ml pasta water

Method:

Blend all sauce ingredients until smooth, adding pasta water after cooking the pasta.
Cook the red lentil pasta.

Stir the sauce through the pasta and heat gently.
Plate up and enjoy ✨
