Randomly saw Pad Kra Pao up on my FYP and was like damn that looks good, I have all the ingredients, let’s make it. This minced pork and Thai basil stir fry was super easy to make. Done in 15 minutes. Packed with protein, aromatics, and flavor. Surprised I’ve never done it before considering how much I love Thai food. With a crispy fried egg on top. Perfect. Gonna be added to the rotation moving forward.

Perfectly barbecued hot and fast St. Louis Pork Ribs in the Westwood for perfect weeknight cook. Chili garlic sauce as a binder and seasoned with salt, pepper, and garlic seasoning. 325 degrees. About 4 hours. No sauce needed. With rich and canh. Perfect BBQ with Vietnamese comfort meal.

Over the past few weeks, I’ve been playing around with Japanese and prepared it in a few different ways: smooth and chunky. For katsu curries, I think I might actually like the smoother curry sauce more getting the crunch and texture from the fried protein. For these, I was also lazy and was using the panko shrimp and tempura shrimp from Costco. What’s your Japanese curry preference?

I love firing up my on a busy weekday and just use it as a one-stop shop to cook my dinner while I am running around the house doing dad things with my girls. Today I put a seasoned tri-tip on the top rack and a bunch of frozen veggies on a sheet pan on the lower rack and set it and forget it at 275 degrees for about an hour before I seared it off to form a beautiful crust on the tri-tip. Slice up, eat with rice and veggies for the perfect weeknight dinner plus leftovers for the next day. The Traeger Westwood is such a great grill for everyday use!
