Lunch meal prep for the week. Both my husband amd I enjoy this salad. This is enough for me for the week, add extra ingredients to serve more people. 2 cans of chickpeas, 1 english cucumber ( can use regular, but english cucumbers have less water), 2 pints of cherry tomatoes, half of a red onion. As much olive oil/ red wine vinegar, salt, pepper, basil, and garlic powder as you like. Best to let marinate a few hours or overnight before eating for best flavor. With our grocery store prices 5 hefty servings with the measurements above comes out to about $1.75 per serving.
