Practicing for the BBGA (Bread Baker's Guild of America) certification exam made me think that people may be interested in checking out the organization. You do have to pay to be a member but their web site is full of info and they put out a great magazine. The picture is what you make in 7 hours in the exam. Pain au Levain, multi grain, baguettes (and baguette rolls), challah (18 single strand shapes, 3 loaves with 4 or more strands), rolls (need to shape 36 in 2.75 minutes), and one dough of your choosing (i chose 65% rye sourdough).
