Dairy Products Technology Center The Cal Poly Dairy Products Technology Center is part of the Dairy Science department at California Polytechnic State University in San Luis Obispo, CA.

Cal Poly has been one of the primary training campuses for people entering or in dairy foods industry careers in California. Lagrange explores the important role student innovation can play in developing new dairy products and reaching emerging markets. She also discusses the opportunities to innovate across cultural traditions and create products that meet the needs of the consumers who will shape dairy’s future. ⁣

The article also highlights DPTC Director Dr. Carmen Licon, who led a Fresno State student team in developing Cottage Core, a high-protein, cottage cheese-based frozen dessert. The product earned second place in the DMI New Product Competition, and the concept was later adopted by multiple processors!⁣
