A Thai-style crispy rice avocado salad finished with Micro Tangerine Lace, Micro Ocean Mix, Micro Orchid, and Kinome Leaf. Day-old jasmine rice, sheet tray, 400°F, quick broil. Then tamarind, fish sauce, shiso, jalapeño, and a coconut vinegar that takes 48 hours and is absolutely worth it.
