Public Bottle Release today, Saturday 6/6/26. It includes the following from left to right:
2025 Collaos which is a dry single-variety cider of Collaos apples which originated in Northern Spain that we're growing in Guatay, California. This cider has so much going on starting with acidity & tannin, plus notes of citrus, rose water, herbs, and salinity. Honestly, one of our favorite ciders to date which leaves us thinking of it after finishing a glass. Also, there's only a little more than a case left of it.
2023 Farmstead Blend which is a dry single-source orchard blend of apples from our low-chill farmstead. This year's edition has a bit higher acidity, yet very enjoyable, than previous years plus a bit of fruit and minerality. This also will likely be the last one beyond a very small batch from last year, which will release on tap some day, due to ever reducing winter chill hours. We have a few cases left, so don't miss out.
2024 Samataguma Valley,a dry single-source orchard blend of fruit from the Guatay orchard. While the orchard has a large number of English, French, American, Spanish, and seedling bittersweet and bittersharp varieties, this particular year was a disastrously small harvest. Of that harvest, there was a high number of redflesh apples which has given this year's version a decidedly raspberry note and a tinge of red. It is a big departure from the previous year and the unreleased following year's cider, a unique and delicious departure. Again, only a few cases remain.
Finally,
A Forager's Fable, our first cider vermouth. This dry vermouth is made with cider from two apple varieties from Julian, Ca fortified with our apple brandy, and infused with 13 botanicals foraged from across San Diego County. It's bitter, herbaceous, spicy, floral, fruity, and a touch boozy. I like it poured over an ice cube or even better in a cocktail (substitute it with any dry wine vermouth and I think you'll be pleasantly surprised).
