Lauki is a summer squash variety often used in south asian/pacific islander curries and soups.
When dried and hollowed out, they are also commonly used to make tools, lamps, birdhouses or other decorations.
They are considered a ‘famine’ crop, very hydrating and easy to digest but provides the body with lots of energy!
Just remember to peel them first 😉

Here is what we do with all of our delicious celery 😍🌱

It is a nutritious, low calorie vegetable filled with antioxidants, water, fiber + vitamins A, K and C. It also supports lowers blood pressure, fights inflammation, hydrated and aids in weight management

1) Let it grow! Celery is resilient and can regrow from the stub! As long as you cut the stalks and leaves, but leave the heart at the bottom, she will always come back❤️

2) Freeze! After processing the stalks and leaves, we chop it evenly and lay it flat on a tray to freeze so that it doesn’t clump together. Then we bag it and freeze it for use! The stalks are great to make vegetable stock/broth, thrown into any stir fry or baked dish!

3) Dehydrate! Even though the stalks are mostly water, the leaves still have a lot of flavor! You can dehydrate the leaves after separating them from the stalks. You can either leave them on a tray in the oven on the lowest setting for about 4 hours, or cover them with a net and leave them to sun dry.

We like to us the dehydrated leaves to make our own seasoning. Just grind up the dried leaves in a mortar/pestle until it is a fine powder. Then mix it with a 2:1 ratio of powder to fine sea salt. Then you have your very own celery salt! Great on meats, marinades, dry rubs, tacos or anything you can dream of!

4) Juice! As mentioned, celery is mostly water but packed full of good nutrients. Its light, refreshing flavor that is complementary with almost anything. Our favorite Green Machine juice is:
2-3 Celery Stalks
1-2 full apples, seeded
1-2 full oranges, peeled and seeded (but save the peels!)
1 Beet
2tbsp honey for sweetness

Thrown all in a juicer and enjoy!

❤️💞❤️

Here is how we process and preserve our rainbow swiss chard post-harvest🌈🥬

We always believe fresh is best! So we utilize as much of those big, leafy greens as we can in salads, wraps, soups and stews
We seperate the leaves from the colorful stalks and freeze them as balls to drop into dishes when cooking for extra fiber!

The stalks are mostly water so great for juices and hydration! They can also be frozen once seperated from the leaves. They make a great crunch in a salad when fresh!

Our favorite thing to do is pickle the stalks! They make a beautiful, vibrant and crunchy pickle.

You need:
-1 Large Mason Jar
-1/2 cup of water
-1/4 cup white vinegar
-1/4 cup apple cider vinegar
-about 8-10 Swiss Chard Stalks with the leaf seperated, cut to size
-Preferred spices (we used fresh dill, peppercorns, garlic, onions, mustard seeds and chili flakes)

Instructions: Boil your vinegar and water until bubbling in a pan on the stove

Thoroughly wash your Swiss Chard Stalks (if any dirt remains you can scrub with a toothbrush) and cut to size to fit in the mason jar

Add in your spices

When the vinegar mix is done boiling, pour it over the Swiss Chard stalks until just covered

Seal the jar and leave it in a dark place until fully cooled. Then transfer to fridge
