WHAT IS THE BEST CALIFORNIA EXTRA VIRGIN OLIVE OIL?
These days everyone has an opinion about how to find the best extra virgin olive oil. But here’s the insider’s perspective-serious olive oil producers submit their olive oils to prestigious olive oil competitions where their olive oils are judged by professional olive oil taste panels. This can level the playing field between giant olive oil behemoths and small producers (like us) because at the end of the day-it’s all about how your olive oil tastes. Judges score based on the three main criteria for extra virginity- fruitiness, bitterness and pungency and evaluate if the flavors in an olive oil are balanced and clean on the palate. That’s what makes a gold medal winning olive oil. For this momentous holiday called we present our fearless, tiny terrier mix (he was a rescue so really, who knows?) Solomon Horatio Finckelstein aka Solly. Although he has acres of farm to explore, he's happiest when he's napping with at least six of his toys. And yes, we know they make dog toys specially for small doggies but he likes his toys to be roughly his same size. Go figure. This is a rare snap of him in his actual dog bed instead of his preferred locale of repose in the giant human bed.

Everyone is asking for more olive orchard updates and juicy tidbits on the behind the scenes of farming so here you go. Today’s garden haul-cucumbers, tomatoes, zucchini (so many zucchini this year), bell peppers, and ripe, luscious figs. If your favorite summer hobby is tooling around your garden in an unflattering hat watching the hour by hour progress of that one cucumber flower forming a tiny cucumber, playing a garden version of where’s Waldo scanning your tomato plants for the insidious tomato worm, then we’re going to be friends. Gardening isn’t about the size of the haul or bragging rights, it’s about finding pleasure and happiness in the little details-the fact that bees and ladybugs have come to give your garden their seal of approval, watching stuff grow that you planted with your own two hands and tasting a perfectly ripe tomato, still warm from the sun. It’s low tech, it’s back to basics, there are no “hacks”-it’s just you figuring it all out and enjoying every minute of it.

When Johnny left his life as a Bay Area chef to become a farmer and start making olive oil, he didn’t know how important his culinary training would become in crafting extra virgin olive oil. Now, his recipes are all focused on teaching people how to use olive oil as an ingredient that makes whatever you’re cooking pop. For him, there is a correct way to do even the simplest task in the kitchen-even if no one will ever notice. Here he’s making a simple salad with an olive oil and fresh orange juice vinaigrette with segmented oranges as garnish. This is his process. As he always says- if you prepare your food with love, it’s gonna taste better.

On those days when it’s too hot outside to cook, a simple salad just hits. Skip the bottled dressings and make your own flavorful, healthy vinaigrette using 2 parts of your best extra virgin olive oil (we recommend our Arbequina EVOO here) + 1 part acid-vinegar or lemon juice and a sprinkle of salt. Chef’s kiss. This is also a great way to make sure you’re getting all the heath benefits that come in just 1 tablespoon of real EVOO. Maybe there are times you really just have to have some ranch dressing, but in our humble opinion-save it for those wings. Dress your salad in elegance. And yes, splurging on the good stuff might seem extravagant but you definitely deserve it.
