Easy chicken enchiladas with cheese and rice recipe

Ingredients:
1 x 375g jar mild tomato salsa
2 tbsp olive oil
500g chicken mince
1 x 30g sachet taco spice mix
1 x 250g packet microwave brown rice, cooked
1 x 400g can black beans, rinsed, drained
2 spring onions, finely sliced
1 x 400g packet (10) regular flour tortillas
1 ⅔ cups (150g) Perfect Italiano™ Perfect Mexican cheese
1 x 400g can diced tomatoes
1 avocado, diced
5 red cherry tomatoes, quartered
5 yellow grape tomatoes, quartered
Coriander leaves, to serve

How Too
1. Preheat oven to 200°C / 180°C fan-forced. Grease a 3 Litre (12 cup capacity) rectangular ovenproof dish. Spread ⅓ cup of the tomato salsa over base of prepared dish
2. Heat oil in a large non-stick fry pan over medium - high heat. Add chicken mince and cook, stirring to break up lumps for 5 minutes or until browned. Add taco spice mix and stir to combine. Add rice, beans, spring onion and 2 tablespoons of remaining salsa. Stir to combine
3. For each enchilada, place a tortilla on a flat work surface. Top with 2 heaped tablespoons of chicken mixture and a tablespoon of Mexican cheese. Roll up to enclose filling and form a log. Place, seam-side down in the prepared dish. Repeat to make 10 enchiladas in total
4. Whisk remaining salsa and diced tomato in a jug. Pour tomato mixture over top of enchiladas and sprinkle with remaining cheese. Bake for 25 minutes or until golden brown. Remove from oven. Stand for 5 minutes
5. Serve chicken and rice enchiladas topped with avocado, tomatoes and coriander leaves

Cheesy Mashed Potatoes
1kg brushed potatoes, peeled, coarsely chopped
½ cup milk
40g Western Star butter, chopped
2 ½ cups (300g) Perfect Italiano™ Perfect Melts
Fish Pie
50g butter
¼ cup plain flour
2 ⅓ cups milk
2 tbsp Dijon mustard
1 lemon, zest finely grated
3 green onions, thinly sliced
¼ cup chopped flat-leaf parsley
900g skinless salmon fillets, cut into 3cm pieces
6 soft-boiled eggs, halved
Steamed green peas and lemon wedges, to serve


Method:
Cheesy Mashed Potatoes
1. Boil, steam or microwave potatoes until tender. Drain. Return to pot with milk and butter. Mash until smooth.
2. Stir in 3/4 cup of Perfect Melts cheese. Season with salt.
Fish Pie
1. Preheat oven to 220°C/200°C fan-forced. Grease a 2.5 ltr (10 cup) ovenproof dish
2. Melt butter in a large saucepan over a medium heat. Add flour, cook, stirring for 1 minute
3. Gradually add milk, whisking constantly until all combined and smooth. Cook, whisking for 5 minutes until thick and glossy. Remove from the heat. Allow to cool slightly. Add 3/4 cup of cheese, Dijon, lemon zest, onions and parsley and stir until combined. Gently stir in salmon. Season with salt and pepper
4. Spoon into prepared oven dish. Top with eggs. Spread mashed potato over the top and fluff with fork or spoon. Bake for 25 minutes until potato has golden peaks, sprinkle over remaining cheese and bake for a further 10 minutes until golden and salmon is cooked through. Serve with peas and lemon wedges

TACO BURGERS!!!!

YES PLEASE

We used 80/20 ground beef for our taco burger, and that blend worked well. Since you’re smashing the burgers on the griddle, you want to avoid beef that is too lean, because the patties may dry out.

In addition to the ground beef, you’ll also need taco seasoning and/or carne asada seasoning. I used Taco and Everything The Sauce Company The carne asada has a deeper, more robust flavor and I really like how it blends with a regular taco seasoning.

The Specialty Sauce Company Jalapeño BBQ Wings Recipe

1lb Chicken Wings
2 scallions (green Onions) diced
4 Tablespoons Jalapeño and Everything Sauce (https://thespecialtysaucecompany.com) - set aside 2 tablespoons for dipping.
Salt & Pepper to taste

1. Pat chicken wings dry with a papertowel and season with salt and pepper on all sides.
2. Place on 350 to 400 degree BBQ grill and cook 15 minutes each side. While chicken is cooking, brush chicken with 2 tablespoons Jalapeño and Everything sauce every 5 minutes or so. Keep doing this until chickens internal temperature reaches 165 degrees.
3. Remove from grill, plate and top with green onions. Serve with a side of Jalapeño and Everything sauce for dipping.

Tip - You can bake the wings in a 350 degree oven for 30 minutes brushing the Jalapeño and everything sauce every 5 minutes or so until chicken reaches 165 degrees internally.
