Wild-caught Sockeye Salmon on sale at Costco for $6.99 a pound. How could I resist? I love fresh salmon, haven’t had it for years.

Easy recipe: Clean fish carefully. Rub with Rubbo Salt Sel Gris and fresh-cracked pepper, inside and out.

Heat EV olive oil in a pot, place fish inside. Cover with a splatter-guard, and cook 7 to 9 minutes on one side, turn and cook 7 to 9 minutes on the other side. Turn again and cook for 3 minutes, and then turn and cook a final 3 minutes.

Let rest for 5 minutes. Debone and plate it, finish with Rubbo Salt Fleur de Sel 9 and serve with lemon slices for garnish

We paired the salmon with quinoa and homemade curried lentils.
