Dry-hopped our Butterfly Blonde Ale with 1 oz. of Citra tonight. Will likely bottle on Sunday. Currently showing an ABV of 4.8% prior to bottling. I’ll consider that a win, since the original recipe shows a final ABV of 4.9%!

Tonight I brewed a batch of what I am calling “Butterfly Blonde Ale”, named as such to commemorate what would be our daughter’s 21st birthday in a few months. The recipe is based on a clone of Kona Brewing’s Big Wave Ale, which happens to be one of my favorites!

For the first time ever, I used a Sous Vide circulator to maintain the mash temp, keeping the grains confined to a mesh bag, and then rinsing the grains in fresh water before boiling and making Galaxy and Citra hops additions, as well as a whirlfloc tablet to improve clarity. With this sous vide method I was able to maintain the mash temp within a single degree, which is pretty awesome!

Wort was racked to the fermenter, and at 75°, the yeast was pitched over the top. Now I have my “redneck cooling jacket” (a wet towel in front of a fan) on the fermenter to keep the temps down for the first 48 hours or so.

10 days after bottling, we cracked open our first seasonal brown ale. Carbonation was perfect, though not a very long-lasting head. The taste isn’t EXACTLY what I was shooting for, but it’s delicious nonetheless! I feel like it will continue to mellow over the next few weeks, so I think by Christmas it will be fantastic. Next batch we are cutting back the hops slightly, and increasing a few of the spices.

Overall, we’re calling it a success!

Some bottling day photos for our first batch of the Gingerbread brown ale. Spent an extra week in primary (because adulting is hard), and finally made it in to the bottles! This two gallon batch yielded ten 22 oz. bottles, and two and a half 12 oz. bottles for sampling. All capped, labeled, and put away for the next 2+ weeks to carbonate and let the flavors even out.

After 3 days, the bubbling in the airlock on the gingerbread brown ale has slowed quite a bit, and a sample shows that we are at 4.9% ABV. 11 more days to go in the fermenter before it’s time to bottle!
