This Monday morning, I’d be grateful for your prayers as we head into a crucial appointment with the Health Dept. Months of hard work are culminating in this licensing decision, and I’m anxious to see it all come together. To finally see my dream become a reality brings tears to my eyes. Fingers crossed that the kitchen inspection goes smoothly and the only hurdle remaining is the sales permit address change, which is already in process and the city/fire inspections.
Renting the space in November 2024 with dreams of opening by May 2025 has been a test of endurance, especially with the unexpected grant-related delay that had us paying for unused space.
Through it all, my faith and the support of my family have kept me going. My husband’s resilience in the face of his spinal cord injury recovery has been a constant reminder of what’s truly important. The work he has put in just to not let me fail and see my dream come true is truly inspiring.
