25 Peppers Hot Sauce is back by popular demand and just in time for Christmas! An artisan, handmade hot sauce of unique character - where heat and flavor receive equal playing time.

To create this perfect burst of hot flavor, I use a variety of well-known (and lesser-known) peppers that I grow in my garden. 25 Peppers makes food exciting and is much different from other bland, additive-heavy, mass-produced retail hot sauces.

25 Peppers contains all-natural ingredients; there are no artificial additives or preservatives, and everything is grown with no pesticides and no soil enhancers.

Because of its thicker viscosity, less sauce is needed; if desired, it can be thinned or extended with white or rice vinegar. It also freezes very well.

We measure the heat of peppers using the ‘Scoville Scale’, which is basically an easy way to determine the overall hotness of a particular pepper.

Of course, other factors come into play such as personal tolerance, what’s firebreathing hot for one person may be a mild tickle for another.

Currently, this scale ranges from 0 SHU (SHU being the Scoville heat units) which is that of the bell pepper, all the way up to over 2 million which is where our current world’s hottest pepper, the Carolina Reaper resides.

And although the Ghost Pepper is no longer the hottest one, it’s still way up there at the 1 million SHU mark, which is described as ‘extremely .

Despite its incredible amount of heat, it’s still very commonly used in cooking. When dried and used sparingly in a meal it adds a surprising amount of flavor and a manageable amount of heat to a dish.

You can use the Carolina Reaper when cooking spicy foods—but be careful not to overdo it. If you're a hot sauce fan, make your own hot sauce with Carolina Reapers (but make sure to use the peppers sparingly). Carolina Reapers can be canned and dehydrated, and they're ideal for use in pepper jellies (again, sparingly).

Once you've dehydrated a Carolina Reaper into a powder or flake form, you have what you need to spice up soups, pots of stew, or chilis. You can also use tiny amounts of Carolina Reaper pepper powder as a dry rub on barbecued meats or jerky, or stir a tiny bit into Thai, Mexican, or Indian dishes to bring up the heat. The initial sweetness of the Carolina Reaper allows for the fascinating experience of the flavor of your dishes changing on the tongue as you eat.

For your own safety and comfort, it's best to wear gloves while working with the Carolina Reaper in the kitchen. No matter what, don't touch your eyes while cooking with Carolina Reapers—not until you've first washed your hands thoroughly.
