A good illustration of the difference between hanging weight and “take home weight/meat on your plate” when it comes to pricing. Some people price based on hanging weight. We just price as “take home weight” to make it less confusing to the customer. The price you pay per pound is actually how many pounds of beef you take home.

When getting a cow processed, You do not get the total hanging weight back. You get a percentage of that weight back. It all depends on how you get it cut! The more you get deboned the less weight you get back.
