Did you know that Green Bell Peppers are immature fruits when they’re harvested? That premature harvesting gives them a fresh and edgy (a.k.a., slightly bitter) taste. Given time to ripen, they will turn from green to yellow, orange, or red, and will become sweeter with age. Technically, green peppers are berries, but one shouldn’t feel obligated to include them in a fruit pie or fruit salad. 😬 They’re yummy when used as a tangy addition to savory recipes. The crisp texture of green peppers makes them great in salads or as an option on a veggie platter. They can be sautéed, roasted, pickled, grilled, stuffed, and baked. The options are endless.

Hubbard Squash is the giant among the winter squashes. They can tip the scales upward to 40 pounds. While most people recognize the Blue Hubbard by its blue-gray rind, the Golden Hubbard, with its bright orange skin, is overlooked as an unrecognized squash. The meaty inner flesh of both types of Hubbard is bright orange and has a starchy, dry, grainy texture (reminiscent of a baked potato). The flavor is sweet and nutty, and has been compared to that of sweet potato. Hubbards keep well in a cool space, their flavor intensifying the longer they’re stored.
There are many stories about the dangerous misadventures of trying to machete, ax, or chop these behemoths to reduce the squash to manageable pieces. However, there is a safe way to get a Hubbard to the supper table: whole roasting. If your oven is large enough for a big Thanksgiving turkey, you have room to roast a whole Hubbard. Wash the squash and place it on a rimmed, lined baking sheet. Stab through the rind many times with a knife, then roast it for about an hour in a 400ºF oven. When a sharp knife slides easily into the thick of the squash, it’s cooked. Carefully cut through the now softened outer skin, clean out the seeds, and scoop out the cooked squash. It’s a cinch…and all your fingers will remain intact!

Oh!! Goodness!!
We never expected to see so many people this past week! Thank you so very much for your support! We are going to enjoy a couple of days of quiet around the farm and get things reorganized.

We’ll see you when the Stand and Bakery reopen on Tuesday (10-5). The Café will be back on Thursday (11-2).
Until then, enjoy the long weekend and stay safe!

We regularly have visitors who aren't from this area. They come from the coast, southern Maine, other New England states, Canada, Brazil (!), the snowbird states…and across the country. It’s a treat to hear them rave about our part of the state– its beauty, the people, the downright gorgeousness of it all. Running around doing our daily thing, we sometimes forget just how lovely our little piece of Maine really is! It’s a good reminder for us to pause, look around, and drink in the beauty. We sure are lucky that we get to live here and should remember to appreciate it a bit more– knowing that we don’t have to go anywhere after a short two-week vacation. Our “vacation” is right here at home!

Our bread loaves live varied “lives” after they leave the farm. Some of the warm loaves are devoured before the customer even gets home (Who can resist the smell of freshly baked bread??) Some loaves are destined to be sliced, bagged, and put into the freezer for later. Folks have raved about their Stutzman’s Farm bread raising the flavor ante when it comes to French toast or a toasted BLT. This, however, is the first time we’ve actually seen our bread “out in the wild,” especially as part of what looks to be a great-looking breakfast! We love that some of our Country White is getting toasted on a classic stovetop toaster rack. It might need a bit more tending to get the bread toasted to a beautiful golden brown, but “slow toasting” is a fitting destiny for our homemade bread!

Know your Winter Squash!
Now that the winter squash is getting plentiful in the Stand, it’s time to review the varieties we have so far. Each of these can be cured (see our post on August 25th for a “how-to”) for long storage, or enjoyed right off. Any of these can be roasted whole, rather than risking life and limb to peel and/or cut them into smaller pieces.
• Golden Hubbard- These beauties can get big! Has a sweet, smooth, dense, orange flesh that’s a bit drier than buttercup. The flavor gets sweeter with age. (We have an occasional Blue Hubbard, too.)
• Delicata- One of the favorites of our customers. Offers a taste cross between sweet potato and butternut, with a hint of chestnuts. The thin skin is edible. Storage time is shorter than that of other winter squash, at 1-3 months.
• Sunshine Buttercup/Kobacha- Another flavor cross, this one between sweet potato, pumpkin, and chestnuts. The flesh is dense and smooth, and also has an edible skin when it’s cooked.
• Buttercup- The sweet, bright orange flesh has a rich, dry flesh that cooks to a satin-like texture. The taste is reminiscent of chestnuts. It can come with or without the turban, and yes, the turban is edible.
• Pie Pumpkin (Baby Pam variety)- Another dense flesh that is perfect for recipes that call for a sweet squash. It cooks down to a smooth consistency that’s perfect for pies.
It’s about time for a winter squash indulgence, don’t you think?

September means it’s apple season! We feature fresh apples from Tudor Farm and Orchards in Dover-Foxcroft. Two of their early apples have arrived: Paula Reds and Ginger Golds. Paula Reds sport a decidedly red blush. They are a cross between the Duchess and Macintosh varieties. Paula Reds are a bit of a Goldilocks variety– not too sweet, not too tart…they’re juuuust right. While they’re great for snacking, Paula Reds get really soft when cooked, so they’re great for applesauce, but not so great for pies.
Ginger Golds are sweeter than Paula Reds. They have a light green skin that can turn a pale yellow if left to ripen on the tree. Ginger Golds are also good snacking apples, and will hold up during cooking, so they are a good pie apple. Their creamy white flesh also resists browning, making Ginger Golds a great choice for salads. Step into the early fall season with a bag of either of these varieties and enjoy that first crisp crunch of a locally-grown fresh apple.

Whew! The farm was buzzin’ again this week! The fields were in hyper-drive, sending a lot of fresh produce to the Stand. And where did all the customers come from?! We greeted a constant parade of old friends, faithful regulars, and even more new folks to the farm. It was wonderful!

We will be taking a few days to pull the Stand and Café back into top form. The Stand and Bakery will reopen on Tuesday at 10:00, ready to welcome you back. The Café will reopen on Thursday from 11- 2:00. Until then, let’s get ready to turn the page from August to September. Enjoy your weekend and stay safe!

How do you tell a scallion from a green onion? Easy! You don’t have to because they’re one and the same. Whatever you call them (we call ‘em green onions), you can use the entire plant to add flavor to your dishes. The built-in bonus: there are two flavor strengths within the green onion. The white bulb end has a sharp peppery taste. It’s definitely more aggressive and “onion-forward” when it’s eaten raw. The white part, however, is usually minced and added to sautéed foods, where the heat mellows its bite. The long green tops have a fresh, milder, sometimes sweeter taste. They are often cut crosswise and added, raw, as a garnish. An added benefit for those with a sensitive digestive system: the green tops are much gentler on your system, while still imparting a light, bright oniony flavor. To store green onions, wrap the root ends in a damp paper towel and put them in a zip bag in the veggie drawer of your fridge. This is a welcomed “flavor two-fer” veggie that shouldn’t be missed!
