This week, create your perfect bowl with your choice of lamb kebab, tandoori chicken, grilled halloumi, or falafel, then load it up with favorites like turmeric basmati rice, hummus, tzatziki, quinoa tabbouleh, roasted peppers, feta, Kalamata olives, pickled onions, fresh veggies, lavash flatbread, garlic naan + more.

✨ Chef’s Table features a new build-your-own menu every week, so there’s always something new to try!

🌱 Thank you to everyone who joined us for the Eat Local Challenge!

Each year, we challenge our chefs to create a meal made entirely from ingredients harvested or raised within 150 miles of campus — with salt as the only exception.

Along with enjoying our 100% local menu, guests stopped by our Local Food Chains activity to compare local and conventional supply chains and learn more about the benefits of supporting local food systems.

Students enjoyed Ranier’s Lomo Saltado or Peruvian Quinoa Salad with Portobello Mushroom at SimplyOASIS. It was especially fun to see returning students spot the lomo saltado on the menu and make their way back to Benson to enjoy one of their favorites!

Located in the Benson Marketplace, SimplyOASIS features flavorful meals prepared without the use of the top-9 major allergens and without gluten-containing ingredients.
