Charcuterie Dinner Party on the deck -
Gluten free coppa and salami rosettes, jarlsberg cheese, T.J's Syrah Soaked Toscano Cheese, and Tillamook White Cheddar, gluten free Yehuda Matzo Squares, roasted cashews, mandarin oranges, Bosc pear, Driscoll's blackberries, hot pepper bacon jam, roasted red peppers, and an olive medley. Oh, and Endangered Species dark chocolate!

Served with a yummy Petite Syrah. This was a perfect mellow night.

Blackened halibut and a creamy risotto pairs really nicely. The spice offset by the cream and pecorino in the risotto. I was out of arborio rice so I used calasparra and it worked perfectly. I did add a little cream and a splash of 2023 Sauvignon Blanc Russian River Valley. Their wines are so good if you've not tried before.

I should have measured the seasoning for the halibut because this one hit nicely with the amount of spice and the flavors. I did add a little smoked paprika snd turmeric to the cayenne, paprika, thyme, and salt and pepper.

Simple pan seared zucchini was the perfect simple side. Literally just the zucchini finished with a spritz of lemon.

Completely gluten free and delicious!

Mondays sometimes need a little sunshine so why not some mini galettes with apricots?!

I'm always so excited wheb the apricots hit the market. These ones I should have let ripened more but I was anxious for a fruit tarts.

Check out the mini fruit galettes recipe in the link in my bio if interested.

Slice 3 to 5 apricots, depending on the size. Add them to a bowl with 1 tbsp of sugar and 1 teaspoon lemon juice.

Preheat the oven to 425 degrees. Add parchmdntvto a tray.

Use any pie crust (gf if needed) thinly rolled. Cut rectangles. Set cut dough pieces on the parchment lined tray. Add the sliced fruit. Brush the tops with cream and add butter pieces to the top of each.
Bake for approximately 25 minutes or until crust is golden brown.

Serve warm with whipped vanilla cream or ice cream.

Beachy vibes because I'm thinking of Baja Mexico. We love our times we've spent in San Jose del Cabo. One of the spots we frequent has beautiful fruit margaritas or fruit mocktails. That was my inspiration for this Tropical Frozen Mocktail.

I also had fun with this morning's yogurt, berry, and churro bowl with the leftover churro bites.

Tropical Frozen Mocktail

➡️ Recipe :

3/4 cup fresh papaya
1/2 cup fresh mango
4-5 fresh or frozen strawberries or sub 10 raspberries
1 tbsp coconut cream
Juice from 1/2 of a small lime
1 cup ice
1 cup Pellegrino Sparking Natural Mineral Water or seltzer water

Blend until smooth. Garnish with a lime sugar rim, salt rim or coconut rim. Add a few flakes of shredded coconut and a few slices of fruit.
Make 3, 3/4 cup servings.

You can add some tequila or NA tequila if you like.

The day just had an upgrade with cheese, garlic and lemon topped gluten free sourdough🥖🥖.
Fresh bread is always worth the wait (but I can never wait until it cools!) especially when served with a yummy dipping oil.

The dipping oil was nade in my new Tierra Cocida bowl, from Spain, where you grate ingredients right at the bottom of the bowl. I picked this up along with Pasolivo Blackberry Balsamic on our way back from Pismo at . You can do a full tasting experience at Pasolivo, but we just tried a few olive oils and vinegars. Be sure to stop by if you are in the Paso area.

The dipping oil was delicious with fresh Meyer lemon zest, fresh garlic, olive oil, blackberry balsamic, and herbs.

I didn't even need dinner at this point.
