Welcome back to 1 Ingredient, 3 Ways, our series where we take one ingredient and ask three of our team members to show us how they would use it!

This week, we're celebrating an ingredient that needs very little introduction here in New Mexico:

🔥 LOCAL GREEN CHILE! 🔥

If there's one ingredient that can instantly make a meal feel a little more like home, it's green chile. That smoky, savory, spicy flavor has a way of making its way onto just about everything—and New Mexicans wouldn't have it any other way.

For this week's episode, we visited our Nob Hill store and asked three members of our team—Barb, Ife, and Jason—to share some of the ways they enjoy using local green chile.

Each of our team members has their own ideas and favorite ways to incorporate green chile into meals, showing just how versatile this local favorite can be.

And then Barb took the assignment VERY seriously. 😂

That's one of the things we love about this series: food doesn't have to be complicated to be exciting. Sometimes one great ingredient is all you need to start thinking about what you can make next.

And local green chile gives you plenty of possibilities.

You can fold it into eggs for breakfast, stir it into soups and stews, add it to enchiladas, layer it onto burgers and sandwiches, mix it into dips, spoon it over potatoes, add it to mac and cheese, or use it to give your favorite recipes a distinctly New Mexican twist.
And of course, you don't have to stop at three ways. 😉

Green chile is also a great example of why buying local matters. When you choose locally grown chile, you're helping support New Mexico farmers and keeping more of those food dollars circulating within our local communities.

🌎 What if the things we throw away could actually help our community?

That’s part of the idea behind Reunity Resources, our Round Up For Change partner this month. 🌱

Based in Santa Fe, Reunity Resources is working to create a healthier and more sustainable community by changing the way we think about food and organic waste. Instead of sending valuable materials to the landfill, they find ways to put them back to work.

Their programs include composting, food recovery, community gardens, and education. They help recover food that might otherwise go to waste, turn organic materials into healthy compost, support local growing, and give people opportunities to learn more about soil, food, and sustainability. 🌱🥕♻️

It’s the kind of work that can have an impact in a lot of different ways. Less waste going to the landfill. Healthier soil. More food being recovered. More opportunities for people to grow food and get involved in their community.

And this month, you can help support that work when you shop at La Montañita. Just round up your purchase at the register.🛒

Maybe it’s a few cents. Maybe it’s a dollar or two. On its own, it might not seem like much, but when lots of people participate, those small donations add up and can help support organizations doing important work right here in New Mexico.

🥭🎉 We have a winner!🎉🥭

A big congratulations to VirgoRose who correctly guessed this week’s mystery food: MANGO!🙌🥭

Mango is one of those fruits that brings a little sunshine to whatever you’re making. When ripe, it’s sweet, juicy, and wonderfully tropical, with a bright, slightly tangy flavor that pairs surprisingly well with spicy, savory, and citrusy ingredients.

And there’s plenty to love about mango beyond its delicious flavor! 🥭 Mango provides vitamin C and vitamin A, along with fiber and antioxidant compounds. It’s a naturally sweet way to add some extra fruit to your day.

One of our favorite ways to enjoy mango is in a fresh Mango Salsa. The combination of sweet mango, zesty lime, spicy jalapeño, and fresh cilantro makes a colorful and flavorful topping for tacos, grilled fish, or chicken—or simply scoop it up with your favorite tortilla chips!

🌶️ Easy Mango Salsa

🥭 1 ripe mango, diced
🧅 1/4 red onion, finely chopped
🌶️ 1 small jalapeño, minced
🍋‍🟩 Juice of 1 lime
🌿 A handful of fresh cilantro, chopped
🧂 A pinch of salt

Simply mix everything together and let it sit for about 10 minutes so all those flavors can come together.

The result? Sweet + spicy + tangy + fresh = one seriously delicious salsa. 🤤

And if you find yourself eating a few pieces of mango while you're making it… well, that's just quality control. 😉

This week, Jovee from our Avanyu Plaza location took on the blindfolded grocery challenge—and the mission was simple: find the refried beans! 🫘

Sounds easy enough… until you can’t see where you’re going. 😂

Jovee had to rely on memory, touch, and a little bit of grocery-store intuition to track down the right item. But did he find the refried beans, or did the search take an unexpected turn?
