Our whole thing is cooking with the seasons, and right now that means onions. Estate Chef Julie Simon has an embarrassment of riches from our estate garden this week, namely Walla Wallas from about as far as someone with a really good arm could toss a baseball. This weekend, while supplies last, that means an incredible onion dip: crème fraîche, aforementioned Presqu'ile onions, fresh herbs, and the grilled pita you all know and love (and always ask for more of)

Also on the table; a calamari al ajillo. So this is the one that we're pairing with maybe a bottle of bubbles or Sauvignon Blanc. The calamari is lightly sautéed in olive oil, seasoned with smoked paprika, and served with a saffron aioli and pan con tomate. Hope you're not hungry while reading this.

And for a little something sweet, we're offering a butterscotch budino. Estate Chef Julie Simon LOVES making desserts and while dessert and wine can be sort of a polarizing topic, we're not stopping her. Caramel, sea salt, hazelnut praline, & whipped cream.

We've been sharing a bit about our commitment to the arts in partnership with Los Angeles Nomadic Division (LAND). But what does all of this MEAN??

For one, we have some really cool art on display in a previously unused space on the property. It looks super spiffy.

"Site specific" in this case means Cole Sternberg, the artist, drew inspiration from our property and our craft as storytellers within the bottle, and created these pieces in response to that. You'll see from the process photos: the canvases were laid on the soil above where the art now hangs, painted with giant rollers. From there, the work was exposed to the elements: 15 hours in the cool coastal waters of the Pacific and Lake Cachuma, then high above Block 5 in our estate vineyard, dancing in the wind on a flagpole erected just for this project. The result is an incredible exhibition, rooted in the very land we have the honor of farming.
