CLEAN TROPICAL REFRESHER 🥭🥥✨
Mango Coconut Limeade 🍋

For one HUGE tumbler (4 cups):
🥭 1 cup frozen mango
🍋 1 lime, washed + chopped
🥥 4-6 tablespoons sweetened condensed coconut milk
💧 3 cups cold water
🧊 lots of crushed ice

Add the mango and lime to a large tumbler and muddle slightly.

Add the condensed coconut milk and water.

Shake or stir really well, then fill heavily with ice.

COMFORT FOOD... MADE WITH REAL INGREDIENTS 🍝✨
Chicken Parmesan 🤍

One of my favorite clean comfort food dinners 👏 Crispy einkorn-crusted chicken, homemade red sauce, melty mozzarella, and pasta. Proof that eating clean doesn't mean giving up comfort food 🤍

Recipe 👇

Serves 4
12 ounces pasta - I use Jovial brown rice pasta

Chicken:
• 2 large chicken breasts, sliced into 4 thin cutlets
• 1/2 cup plain full fat Greek yogurt
• 1 teaspoon Dijon mustard (optional)

Breading:
• 1 box (4.5 oz) Jovial einkorn crackers, crushed
• 1/3 cup Parmesan
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• 1 teaspoon salt
• 1/2 teaspoon pepper

Sauce:
• 8oz tomato paste
• 2 1/4 cups water
• 2 tablespoons olive oil
• 4 garlic cloves, minced
• 2 teaspoons honey
• 1 teaspoon salt
• 1 1/2 teaspoons Italian seasoning
• Red pepper flakes + black pepper

Cheese:
• 1–1 1/2 cups fresh shredded mozzarella or parmesan

Bake chicken at 425°F for 18–22 minutes.

Top with sauce and cheese, then broil until melted.

Serve over pasta tossed with homemade sauce.

This is what sustainable clean eating looks like for me… even on my birthday 👀✨

I lost 50 pounds focusing mostly on simple whole foods first 🤍

Now in maintenance, my weekdays are usually simpler meals and whole foods…

But on weekends? We’re making comfort foods 👏✨

My birthday menu was:
🤍 grinder dip on homemade einkorn baguettes
🤍 teriyaki chicken bowls
🤍 million dollar spaghetti
🤍 my favorite chocolate milk
🤍 vanilla birthday cake with coconut whipped frosting

The difference now is that even my comfort foods still fit my food standards and are made with real ingredients ✨

That’s what truly made this lifestyle sustainable for me — not avoiding comfort foods forever, but learning how to make them differently 🤍

Clean comfort food at its BEST 👏🥦🧀

One Pot Broccoli Cheddar Chicken Orzo ✨🤍

Creamy cheesy orzo with broccoli and chicken made with real ingredients for the coziest easy dinner 👏

Ingredients:
• 12 oz Jovial orzo
• 2 chicken breasts (about 1.15 lbs)
• 4 cups broccoli florets, chopped small
• 1 tbsp avocado oil
• 3 tbsp butter
• 4 cloves garlic, minced
• 3 tbsp einkorn flour
• 2½ cups whole milk
• 2 cups chicken broth
• 4 oz cream cheese
• 2½ cups shredded sharp cheddar cheese
• ¾ tsp salt
• ¾ tsp pepper
• ¾ tsp onion powder
• optional paprika

Directions:

1. Dice chicken into bite-sized pieces and season with salt + pepper.
2. Heat avocado oil in a large 12-inch skillet over medium heat. Cook chicken until mostly cooked through. Remove to a plate.
3. In the same skillet, melt butter. Add garlic and cook 30 seconds.
4. Whisk in einkorn flour and cook 1 minute.
5. Slowly whisk in milk and chicken broth until smooth.
6. Stir in uncooked orzo. Bring to a gentle simmer and cover.
7. Cook about 8–10 minutes, stirring often, until orzo is mostly tender.
8. Stir in salt, pepper, onion powder, and paprika if using.
9. Add cream cheese and stir until melted.
10. Stir in broccoli and cooked chicken. Simmer a few more minutes until broccoli softens.
11. Stir in cheddar cheese until creamy and melted.
12. Top with extra cheese if desired and broil a few minutes for that bubbly golden top 👏✨
