The time has come to move on to our next evolution.

Come celebrate with us this Saturday for our final service at Sazon Peruvian!

It’s been a helluva time there over this last year and I am extremely grateful to have had kitchen to cook from, a place to serve you all at, and such a great platform to launch Red Eye Barbecue from.

We are serving up our standard menu of beef cheeks, pork ribs, chickens, beef ribs, jalapeño cheddar sausage and will be rocking a couple of our favorite pork belly specials from this last year, along with green rub pork ribs.

What I love about pork belly… pretty much everything.

Uncooked, the pork belly strip displays what would normally be considered an intimidating amount of fat, but with the low and slow cook all of that fat soaks up and renders off, creating a delicious intensity of pork flavor.

It’s a small cut compared to the others, small pieces of meat tend to heavily saturate with smoke, and with the very mild and terroir based applewood we use, that saturation lands very nicely.

High bark to meat ratio. All killer, no filler. Basically the opposite of pulled pork made from a butt or shoulder. (You notice that we haven’t cooked any pulled pork this far, I’m not a huge fan.)

All that intensity of flavor builds a unique structure, one that is suited to carry the missing element, the sweetness, usually in the form a fruit syruo, compote, or glaze.

Treat yourself and impress the heck out of your friends at this year’s Super Bowl party!

As if showing up with delicious smoked meats isn’t already awesome enough, Red Eye Barbecue will be whipping up some special top tier snacks for the Big Game.

it’s pretty cool how octopus interact with humans. Most animals in the wild are going to run away or take a defensive posture if they see a human.

The octopus is the kind of intelligent creature that will approach a potentially dangerous creature bigger than itself, like a scuba diver, and then decides to even reach out and touch it, and let it into its world.

They aren’t like cows, which are generally just considered a low intelligence animal, they haven’t been brought up to expect food from humans like birds such as seagulls, pigeons or ducks, or like bears or farm animals. And they surely haven’t evolved into any kind of domestication relationship with people as they don’t even breed in captivity.

It is some type of intelligence, or maybe a form of confidence even. Maybe the animal is so smart that it just falls victim to its own curiosity, or to its own confidence to solve problems which is so ingrained that they do not sound the risk alarm when they decide to reach a te****le out towards a diver or a person at an aquarium.

As if they already know, were they to pick up on the slightest threat that they have already weighed their ability to act accordingly to keep themselves safe.

I just think we can learn so much from them, in this case I think it translates to attention, intention, courage and connection.

The octopus may know that we are all connected and we should act accordingly. And that means having the courage to always reach out and connect with our environment and everyone in it.

Instead of the term “ spineless as a jellyfish”, how about we try “ outgoing as an octopus.”?
