CUCUMBERS
This weekend’s cucumber harvest is something special — a mix of crisp, flavorful varieties, perfect for every use. Our Little Leaf cucumbers are compact but incredibly productive, with bright emerald skins and a satisfying crunch that’s perfect for both fresh eating and pickling.
The Mini Me pickling cucumbers are small, tender, and ideal for snacking straight from the bag or turning into quick, crunchy pickles — classic “grab a handful and go” cucumbers.
And our Picolino-style soft-skin cukes are the smoothest of the bunch: thin-skinned, nearly seedless, and naturally sweet. They have a delicate, refreshing bite that doesn’t need peeling! Whether you’re slicing, snacking, or stocking up for pickling, this is a cucumber lineup worth coming early for.
PICKLING 2 WAYS
Traditional Fermented Pickles 🥒
If you’d like to try fermenting cucumbers, for the best flavor and probiotics, it's as simple as salt, water, and a little time. Pack your cucumbers (Mini Me Picklers are perfect whole) into a jar with a few cloves of garlic and sprigs of dill (coriander seeds optional). Stir 1 tablespoon salt into 2 cups water and pour to fully cover.
Leave the jar loosely covered on the counter for a few days, letting the natural cultures do their work. When you notice that deep, tangy aroma, move to the fridge and enjoy. You can adjust the time depending on your preference, "half-sour" cukes are great too!
Quick Pickles (Ready in 24 Hours) 🥒
Our cukes are perfect for easy, no-fuss pickling at home. Just slice your favorite type, then pour over a warm brine made from 1 cup vinegar, 1 cup water, 1 tbsp salt, and 1–2 tbsp honey or sugar. Add a few smashed garlic cloves, fresh dill, or spices like coriander, black pepper, and bay leaf if you like, let cool, and refrigerate. They’ll be crisp, bright, and ready by the next day — even better after a couple days in the fridge.

Cucumber-Herb Cooler with Basil & Fennel
Blend a generous amount of Jessica’s Cucumbers and strain into a chilled pitcher to create a fresh cucumber juice base. Muddle Jessica’s Basil, Fennel fronds, and Parsley, then stir into the cucumber juice with Organic Lemon Juice and a touch of Local Honey. Serve over ice with cold or sparkling water for a refreshing, herbaceous drink where cucumbers truly take center stage.
Chilled Cucumber & Beet Bowl with Fresh Herbs
Use Jessica’s Cucumbers as the base of this refreshing bowl—dice and lightly crush them to release their juices. Fold in chilled roasted Jessica’s Beets and sliced Jessica’s Celery. Finish with a heavy sprinkle of Jessica’s Parsley, Dill, and Basil, then dress with Organic Apple Cider Vinegar, Olive Oil, and sea salt for a vibrant, cucumber-forward dish.
Warm Escarole & Cucumber Sauté with Fennel
Quickly sauté Organic Garlic in olive oil, then add Jessica’s Fennel and thick-cut Jessica’s Cucumbers, allowing them to soften slightly while keeping their structure. Fold in Jessica’s Escarole and Green Leaf just to wilt. Finish with sea salt and a touch of Organic Lemon Zest—this warm preparation highlights cucumbers in an unexpected, savory way.
