Hey Sugar! What’s for dinner?! I have a couple meals to post but here’s one idea for tonight if you’re in the mood for Italian.. Lasagna with homemade (basil 🌿) pasta. I’ve made plenty of homemade pasta dishes but have never done Lasagna! Haha, which is probably the easiest as you just have to roll the sheets out and that’s it.
My son loves, loves Lasagna. As well as all the junk food there is out there. So if he’s helping himself to 3 plates of this, I’m a happy mama :)
I may have posted this pasta recipe before, but I will do it again in case you want to try it. It is one that my husband and I got when we were dating and took a cooking class.

Homemade Pasta Dough
2 1/2 cups (12 1/2 oz) Italian-style “00” or I bleached all-purpose flour, plus more for dusting
1 tsp fine sea salt
4 large eggs
1 TBS olive oil
Semolina flour, for dusting and pasta surfaces
* 1. To make dough: place flour and salt in a large mixing bowl and whisk to combine. Make a well in the center of the flour mixture and add eggs and oil. Using your fingers, blend the eggs into the flower mixture, stirring the flour in from the sides of the well and working outwards . When the pasta dough is thoroughly mixed, turn onto a lightly floured work surface. Knead dough until it is smooth and flexible, but not sticky, adding small amounts of flour as needed; about five minutes. Shape the dough into a ball and flatten into a disk. Cover with plastic wrap and allow to rest for at least 20 minutes or up to an hour at room temperature. (you can also place in the fridge for a few hours if needed.)
2. To roll out and cut dough: secure a pasta machine to the edge of a long countertop. Using a bench scraper, cut the dough into four pieces. Keep extra dough covered in plastic wrap while working with one piece. With a rolling pin, roll the piece of dough into a rough rectangle that will fit inside the widest setting of the pasta machine.
