Labor Day weekend is here. Weekend Menu: Fresh green beans, garlic mashed potatoes and a fish fry:
Catch the Fish & start the fire
Wet Fish - Coat in Chef Robert's Gourmet Breading Mix - Let them rest a few minutes - Place in hot oil until browned.
Add a few sides from the Garden:
Green Beans
Ingredients
• Fresh green beans or 2 cans
• 4–5 slices bacon, chopped
• ½ cup finely diced onion
• 1 teaspoon minced garlic
• 1 tablespoon brown sugar
• ½ teaspoon black pepper
• ½ teaspoon salt, or to taste
• ½ teaspoon garlic powder
• ½ teaspoon onion powder
• ½ cup chicken broth
• Optional: 1 teaspoon Worcestershire sauce
Directions
1. Cook the bacon in a skillet until browned but not overly crisp. Remove the bacon and leave about 1–2 tablespoons of bacon grease in the pan.
2. Cook the onion in the bacon grease for 3–4 minutes until soft. Add the garlic and cook another 30 seconds.
3. Add the green beans, chicken broth, brown sugar, pepper, garlic powder, onion powder, and Worcestershire if using.
4. Stir the bacon back in.
5. Bring to a gentle simmer. Reduce heat and cook 20–30 minutes uncovered, stirring occasionally.
Garlic Mashed Potatoes
3 lbs Yukon Gold potatoes, peeled and cut into chunks - boiled
6 cloves garlic, peeled
6 tablespoons butter
¾ cup heavy cream or half-and-half
½ cup sour cream
1½ teaspoons salt, plus more for the cooking water
½ teaspoon black pepper
¼ cup grated Parmesan cheese, optional
Mash everything together.
