Pet Nat hard cider from our organic cider apples — super happy with this year’s batch! Pressed and pitched December 15, combo of Dabinet, Liberty, GoldRush, Grimes Golden, Wickson. Made a beautiful rustic cider. Pet Nat is about as simple and clean a way to make hard cider as there is. Start with quality apples and let the apples lead the way.

This Pet Nat is a 4 week fermentation that was bottled January 20 with an ounce of sweet cider/bottle. At this point the cider has a great small bubbles effervescence and lots of live flavor from the orchard: fresh, crisp, a little smokiness from the Dabinet.

We’ve got a ton of gorgeous late fall organic greens, apples, root crops, headed to the Oneida county Public market Saturday 9 AM to 1 PM. Our certified organic Florina apples are looking amazing and tasting even better. Mixed mustard greens cook just like broccoli Raab and give a shot of vitamins, here in the low light of December. The market will be filled with craft vendors, local pastured meats, bagels, bread, loads of gift ideas. See you there!

Organic Beets are piled high at the Oneida CountyPublic market in the train station today 9 to 1. We’re also loaded with apples, carrots, broccoli, cauliflower, potatoes, garlic, and all the greens. All fresh and organic from the farm. Last of the tomatoes too! Hope to see you there.
