Most folks are quick to point fingers at the packers โ and sure, they hold a lot of power โ but the real story might be happening a little further down the chain.
Take a look at these charts. Retail beef prices and margins have stayed strong โ even when cattle prices and packer spreads bounce all over the place.
๐๐๐ง๐โ๐จ ๐ฌ๐๐๐ฉโ๐จ ๐ฌ๐ค๐ง๐ฉ๐ ๐ฃ๐ค๐ฉ๐๐ฃ๐:
โก๏ธ Walmart now captures about one-fifth to one-quarter of all U.S. grocery sales.
โก๏ธ Theyโve moved far beyond being โjust a retailer.โ In the last few years, Walmart has invested in Sustainable Beef LLC (a rancher-owned beef company in Nebraska) and opened its own 300,000 sq ft case-ready beef facility in Olathe, Kansas.
โก๏ธ That means Walmart now has a hand in sourcing cattle, processing beef, and controlling the shelf price โ tightening its control from pasture to plate.
When a single retailer has that much reach, they donโt just set the price at the register โ they influence the entire supply chain. Meanwhile, independent producers and small processors are left trying to compete in a market where both the buying and selling ends are consolidated.
So while packers deserve scrutiny, the conversation about market concentration has to include retail giants too โ because thatโs where a growing share of the profit and pricing power now sits.

This isnโt about picking sides. All beef is good beef when itโs feeding your family. My goal is simply to help the everyday consumer understand where their food comes from, how the system really works, and why it matters.
At the end of the day, the more you know about what happens between pasture and plate, the better choices you can make โ and the more appreciation youโll have for every rancher, truck driver, processor, and worker who makes it possible.
