Cut from the top blade, flat iron steak ranks right behind filet mignon for tenderness, but with all the rich, deep beefy flavor of a ribeye. It’s naturally lean, high in protein, and extremely uniform in thickness, which means it cooks evenly and quickly every single time.
Here is a quick and easy recipe to bring out the absolute best in this incredible cut!
🧄Easy Garlic & Butter Pan-Seared Flat Iron Steak🥩
⏰Prep time: 5 mins | Cook time: 10 mins | Servings: 3-4
💥Ingredients💥
1.5 lbs flat iron steak
1 tbsp olive oil
2 tbsp unsalted butter
3 cloves garlic, smashed
2 sprigs fresh rosemary or thyme
1 tsp coarse kosher salt
1/2 tsp freshly cracked black pepper
Instructions
Prep: Pat the steak completely dry with paper towels. Season generously on all sides with salt and pepper.
🔥Sear: Heat olive oil in a heavy cast-iron skillet over high heat until smoking. Add the steak and sear for 3–4 minutes without moving it to build a deep crust.
Baste: Flip the steak, turn heat down to medium, and add the butter, garlic, and herbs to the pan. Spoon the melted butter over the steak continuously for another 3–4 minutes (aiming for 130–135°F internal temp for medium-rare).
Rest & Serve: Transfer to a cutting board and let rest for 8 minutes before slicing thinly across the grain.
