RECIPE SPOTLIGHT: STEAK SALAD

Steak & Marinade
½ cup olive oil
¼ cup apple cider vinegar
1 tablespoon kosher salt
5 cloves garlic, minced
1 lb Cardinal Landing Farms Flat Iron or Flank Steak
Oven-Roasted Potatoes
1 lb red potatoes, cut into small wedges
2 tablespoons olive oil
1 teaspoon dill
1 teaspoon parsley
1 teaspoon chives
½ teaspoon kosher salt
½ teaspoon freshly ground pepper
Salad
8 oz baby greens
2 ears corn
8 oz cherry tomatoes, halved or quartered
½ cup green onions, thinly sliced
½ cup ranch dressing
Directions
1. Marinate the steak:
Combine olive oil, apple cider vinegar, salt, and garlic in a resealable bag. Add the steak, squeeze out the air, seal, and refrigerate for at least 2 hours or overnight.
2. Roast the potatoes:
Toss potatoes with olive oil, dill, parsley, chives, salt, and pepper. Spread in a single layer on a parchment-lined baking sheet. Bake at 400°F for about 1 hour, stirring occasionally so all sides brown.
3. Grill the corn:
Grill corn over high heat, turning occasionally until evenly charred. Cut the kernels from the cob.
4. Grill the steak:
Sear the steak over high heat, turning once, until it reaches about 130°F for medium. Remove from the grill and let rest for 10–15 minutes. Slice thinly against the grain.
5. Build your salad:
Toss the greens, tomatoes, green onions, corn, roasted potatoes, and ranch dressing together, or arrange everything on a large platter and let everyone build their own!
