It’s just about that time of year when I start thinking about making my carrot cake with cream cheese frosting. I usually make it for Easter. The recipe originally came from a Betty Crocker cookbook that I received as a wedding gift back in 1982! I no longer have the cookbook, but fortunately I saved a copy of the recipe. 🥕🍰

Orecchiette Pasta, lightly tossed in butter with Parmesan, salt, and cracked pepper, then topped with oven-roasted yellow tomatoes, sautéed rainbow peppers, red onion, and fresh baby spinach.

The tacos were made with braised chicken tenders seasoned with taco seasoning, fresh-squeezed lime, and a little butter. I kept the lid on the pan while they cooked, and they came out incredibly tender.
The rice is mixed with fresh cilantro, lime juice, salt, and pepper. I press it into a ramekin to create that lovely shape you see on the plate. I added a few sliced avocados for garnish and some roasted butternut squash on the side.
The tacos are topped with a citrus sour cream. I grated orange, lemon, and lime zest into the sour cream and stirred it together. It’s so delicious that way!

The Best
CILANTRO LIME VINAIGRETTE

Ingredients:
2 cups fresh cilantro, you can use the stems. They are very sweet and crunchy!
1 garlic clove, chopped fine and roasted in a sauté pan in olive oil.
¼ cup fresh lime juice
2 teaspoons honey
½ teaspoon ground coriander
½ teaspoon of cumin
½ teaspoon sea salt
½ cup light extra-virgin olive oil
Blend all ingredients in a food processor, maybe your blender will work as well!
Make it creamy:
(optional - choose one):
1 avocado
½ cup whole milk Greek yogurt

Delicious rye bread. Follow the recipe in the comments. I substituted one cup of rye flour, and added caraway seeds.
