Last night's dinner was a continuation of my tour of flavors from Africa and the African diaspora. This time the flavors were Tunisian. The result was a salad both spicer and sweeter than I usually make but super yummy. It is likely to become a go to potluck item for me since it is easy to put together ahead and holds up well. Leftovers for today's lunch were great.

Last night's dinner was Shiitake and Tofu Larb which is always a hit. Wanted to share this recipe with you all. It was the first recipe I mastered with tofu that I actually love. Not actually vegan because of the fish sauce by can me made vegan if you use a vegan fish sauce. Can also be glutten free if you are careful about your soy sauce brands. .

Tried out this Vegan Hoppin' John recipe for New Year's Day but it was so yummy that it has been added to the regular rotation and exploring the flavors and spices of Africa and the African dysphoria for Black History Month was the perfect motivation for making it again. 'sDay

Made a Mayalasian inspired take on the Yu Sheng Lunar New Year "Prosperity Toss," based on a friends recipe with a few tweaks to make it vegan and a little less sweet. It was so good. Lunar New Year celebrations run through Sunday February 5th this year so there is still plenty of time to partake. Folks wanting a more tradiitonal take can omit the tofu and replace with raw or smoked fish or cooked shrimp.

January is the height of the citrus spirit. I always go a little overboard buying bags of different varieties and can't always eat them all before the skins dry out a bit and they are just past their prime. This year, I learned that the natural pectin in oranges means you can make jam with them with just a little sugar and heat. Thought it would be a great way to preserve this season a little longer. To honor Lunar New Year I added a little five spice to the mix and a few anise seeds to make it a bit more anise-forward since I knew I would be using some for sandwich cookies and wanted it to read more dessert than savory without making it too sweet. This whole thing took less than 30 minutes. This jam did indeed make yummy sandwich cookies but also tasted great on toast and drizzled over cooked oatmeal. Its less bittter than marmalade but not too sweet either.

We are right in the middle of the annual Lunar New Year festival and I felt like celebrating. My friend Sky Wu introduced me to the idea of using Mooncake presses to make cookies a few years ago at one of her amazing DIY dumpling parties and I have been wanting to experiment with it ever since. Found this cute press for Year of the Rabbit and incorporated by own ethnic heritage by making a traditional Scottish shortbread with the asian twist of adding oolang tea to the short. I'll put a link to the jam recipe and an matcha version in the chat.
