We have 6 days left, folks. Thursday-Saturday this week and next. Until we wrap up on the 18th, we need to reduce our stock.

This means MASSIVE LIQUIDATION SALE. These bottles (and kegs) need to be reduced to about 1/10 of what we currently have, so we can store them on site at Standard. Starting today, all 12oz pours of Sovereign beer will be $5, no matter the beer. All bottles will be $7, no matter the beer. This means as much as 60% off!! Wowee!

Sovereign Brewing Will Die on a Hill

It is with a heavy heart that I’m announcing that Sovereign Brewing’s last day will be November 18th. Serendipitously, this will make exactly 3 years of existence. This decision is preempted by dozens of factors - some personal, but mostly business.

The TL;DR of this choice is that it will allow us the opportunity to “grow down”, and focus on making Standard as efficient and functional as possible, honing our craft, and balancing our lives. Sovereign has been held back for 3 years by the effects of Covid, and it is simply time to cut the anchor.

Double bottle release today! We snuck these on draft a couple weeks ago, and if you’ve had a chance to try them, you know how tasty they are. Now available in 500 ml bottles!

WEEPING HAND: a blend of coolshipped ales aged for extended periods in oak, then refermented on raspberries. Fruit aromas meld with wild microflora. Powerful round, acidity hits the palate first, followed by a long wave of juicy raspberry goodness. $11

SAISON w/CHARDONNAY: oak aged saison, re-fermented on Chardonnay grapes. Later keg conditioned for an extended period on one of our favorite brett strains, drying it out tremendously and providing a dusty “sweet tarts” kind of candy note on the finish. A total crusher. $16

We’d like to take a moment to talk about green glass.

Maybe you’ve noticed that some of our beers are packaged in brown and some are in green. This is by design, but why? Perhaps you’ve been told that green glass is bad for beer because it becomes susceptible to “skunking”. We all know how controversial skunky lagers can be, so why would we want it in saison?

Green glass lets more light through than brown and that light reacts with hops to form 3-MBT, a chemical very similar to that found in skunk spray. While this might sound undesirable, most chemicals are perceived very differently in small doses than when we are overwhelmed by them. Imagine some of the more potent flower aromas, like lilies. A faint whiff can be alluring, but a nose-full can be off-putting. So it is with 3-MBT. Just the slightest amount plays beautifully with brett aromas and creates depth and a slightly cutting edge that adds definition and we love this in saison.

The batch of Faithful and True that just took home bronze at is the one we have for sale right now, and we feel that green glass had something to do with it. It is also on draft right now, so feel free to try this for yourself. The draft version has no light exposure at all, and you can try the two side by side.

Just tapped - Open Fermented Witbier! But what does it mean?! Well, most beer is fermented in a sealed, sterile fermenter with a monoculture of yeast. Spontaneous beer ferments in oak barrels after a night in the coolship without pitching yeast. Open fermentation is neither. Or maybe both? In this process, we didn’t just cool the beer in the coolship, we pitched wit yeast in it and let it ferment for a few days before moving it to barrels where it aged out for a few months. We then keg conditioned it and you can now drink it in the tap room. The process makes the yeast more expressive, and the time in oak brings structure and balance, and in this case, a lovely vanilla note that marries the elements in such a delightful way. Draft only release.

Big news everyone! Faithful and True just took bronze at World Beer Cup! Big ups to and for winning with Scots Gone Wild and Golden Sour, both brewed by our guy . Congrats on the hat trick, Jake!! You can stop by and grab some Faithful and True on draft right now!

2 YEARS. I wonder if time passes this quickly for the beers in barrels. We are super excited to drop a handful of treats on all y’all tomorrow, in celebration of keeping things afloat this long.

In order of appearance, we are finally putting out our first unfruited, all-spontaneous beer! Apocryphal is a blend of 3 ages of coolship beers, (17, 15 and 12 months) aged in both puncheons and Bordeaux barrels. Bottle conditioned for 15 months, with a spritzy 3 volumes of CO2, for a lively pour. Decidedly tart, with lambic-esque aged Styrian Golding hops and subtle funk from the natural micro flora inherited in the coolship. $12/500ml, and we conditioned a number of kegs, too!

Speaking of coolships, a fun trick is to use them as open-top fermenters. By cooling the wort before castoff and pitching yeast, we are able to get a unique fermentation profile. The flat shape of the vessel and the absence of hydrostatic pressure, the continuously present oxygen during the first few days, and the convection patterns all play into the way the beer turns out. This is how we made Temple of Folly, a spelt lager. We then aged it in spent barrels for 6 months and keg conditioned it. With just the slightest hint of acidity, it is a very unique, snappy little number at 4.5%.
