Blue Evolution Executive Chef Maylin Chávez recently brought all the Blue Evolution goodness to the forefront at her latest collab pop-up at Portland hotspot, Street Disco. From wakame-cured albacore tostadas to a chapulines 🦗 and wakame quesadilla to an uni dish that was like devouring the entire ocean in a single bite, we love seeing how chefs create new and exciting flavors with sea veggies! Stay tuned over the next couple days as we share more about each seaweed-centric dish.
