Watching an old news clip of us from COVID today brought me right back to the fire.
I remembered the absolute adrenaline, the endless pivots, and the overwhelming weight of fighting to keep our doors open and our team safe. Back then, every single day was a battle to find light in the dark.
They say the phoenix doesn't just survive the fire it uses the flames to transform.
Pie Bar didn't just survive. We fought for every inch. Out of the ashes of uncertainty, we rebuilt stronger, bolder, and more deeply connected to our purpose.
To everyone who bought a pie, picked up a cocktail to-go, or stood by us in the hardest moments: Thank you. You are the reason this flame still burns so bright.
We are still here. We are still rising. And the best is truly yet to come.

❤️ I’VE COME HOME.

For decades, this little corner of Bellingham was home to my great grandparents, Matt and Millie, who owned and operated what was once Matt & Millie’s Cafe now the Old Time Cafe.

This was more than a café.

It was a place where people were fed, welcomed, and cared for.

My great grandparents believed that nobody should go hungry. They served box lunches to people experiencing homelessness, veterans, and anyone who simply needed a meal.

That spirit stayed in our family.

And now, generations later…

Their great granddaughter has come home.

I’m bringing Pie Bar to Bellingham right next door to the place where my family’s story began.

But I didn’t come home empty handed.

I brought the box lunches on wheels. 🥧❤️

My Pie Bar food truck is carrying forward the spirit of the meals Matt and Millie once served taking food to people who need it and continuing their tradition of giving back.

The wheels may be different.

The name may be different.

The generation may be different.

But the heart is exactly the same.

Matt & Millie, this one’s for you.

Your great granddaughter has come home.

And I brought the box lunches on wheels.

To everyone who showed up under the rocket ship today: thank you from the bottom of my heart for the incredible love and energy.
We couldn’t open our windows today because of administrative county paperwork. Whatcom County gave us the green light to switch from King County reciprocity to a standalone local permit, but their payment desk closed for the weekend at 3:30 PM on Friday before the fee could be processed.
After 13+ years running this business, I refuse to cut corners. We do everything 100% by the book, which means waiting out the weekend closure so we can open with every single official sign-off in place.
We will be first in line Monday morning to pay the local fee, finish the review, and get our green light. Watch this space for our updated opening time and cannot wait to serve you! Growing Pains💫😭

To everyone who reached out regarding my post a few days ago, thank you. Today, I want to have a very honest conversation about what it actually takes to survive as a small business owner in Seattle right now.
Over the last 13 years at Pie Bar, we haven't just been struggling with economic challenge we’ve been surviving on our own:
8 years ago: Assaulted outside our Ballard shop. Police arrived and told me their "hands were tied." The officers wanted to help, but city policies had handcuffed them.
6 break-ins & thefts: Had windows smashed, generators stolen, and my personal belongings taken. When I tracked my stolen computer, police were so spread thin it took 4 days for a call back.
Ballard closure: Between constant crime, customers and employees not feeling safe, we were forced to close our Ballard shop after 12 years.
The absolute final straw happened recently.
As we were loading the Pie Bar food truck food for the biggest event of my career (2026 FIFA World Cup) a man physically assaulted me and my employee for turning on our generator. My employee had to pretend a pen in his pocket was a knife just to get him to back off. The attacker ripped out our generator cord and destroyed our electrical panel.
I called the assault line two times to press charges, and no one has been able to call me back because the department is stretched way past its breaking point.
We have moved a branch of our operations to Bellingham. Being in a safe city made me realize something heartbreaking: I had become so numb to the chaos in Seattle that I forgot what it feels like to feel safe as a business owner.
I want to be completely clear: I am not throwing our frontline Seattle police officers under the bus. These men and women are being hamstrung every single day by the policies of Mayor Katie Wilson and city leadership. When city hall ties the hands of law enforcement and fails to support them, it isn't just the officers who suffer it’s the small business owners, our workers, and our neighborhoods who are left totally unprotected.
Small business owners pay high taxes, work 80 hour weeks, and put everything on the line. We are not replaceable.
Stop hamstringing our police, turn on the cameras, and keep the citizens of Seattle safe. When Seattle was onstage for the World Cup you cleaned up the city and implemented safety protocols. How do we come together as a community and make the Emerald city great again?

An Open Letter to Seattle City Leadership:
My heart is completely broken over the senseless, devastating shooting at the Bite of Seattle.
The Bite holds a deeply personal place in my story. Back when I was just starting out, it was one of my very first original contracts with this city. That event put Pie Bar in the spotlight and gave me a platform when I was building my business from the ground up. I will forever be grateful to them for giving a young, hungry business owner a chance to be seen. They helped build me, and I owe so much of our early momentum to that opportunity.
But what happened this weekend is simply not tolerable. Three people lost their lives, and innocent families—including a toddler—were caught in the crossfire.
Mayor Wilson and City Council, I need you to hear this: Every single day, young restaurateurs and chefs come out to these events, especially at the beginning of their careers. They wake up before dawn, they pour their entire souls into their prep, and they stand out there in those tents with one simple, vulnerable hope: that people will taste their food and feel the love they put into it. They are sharing a piece of themselves, trying to make an honest living and bring this city together.
To have that hustle, that heart, and that community met with such horrific violence is devastating. It forces us as business owners to ask you the hard questions: Where is the protection for our small business owners and our communities? Where is the humanity?
Those vendors had to run for their lives and abandon their livelihoods. We cannot just watch this happen, offer thoughts and prayers, and move on to the next news cycle. How are we going to make real, tangible change in this city? Seattle must be a place where creators, chefs, and families can gather safely to celebrate our local food culture without looking over their shoulders in fear.
You are the leaders of this city. We need you to step up. We need real protection for the people who make Seattle vibrant.
We have to do better. We have to demand better.

Fresh off our incredible run as an official food truck vendor for the FIFA World Cup, we are bringing that massive energy straight to you. We came from the World Cup, and now we are putting down our roots in Whatcom County forever.
Next weekend—on Friday and Saturday night—if you look carefully around the base of the iconic silver rocket, you’ll find our signature pink Pie Bar food truck plugged in and serving up our sweet legendary slices you’ve been waiting for. I simply could not wait another minute to bring the heart and hustle of Pie Bar to this spot. Come find us. This is our new home.
But this truck is just the very first spark.
